Nothing has been swapped out for something easier to find. Instead, the book opens with a shopping guide: thirty-one Japanese ingredients with their English name, their romaji, and their Japanese label, so you can match them when ordering online or standing in an Asian grocery. It says which four to buy first, what the difference is between hon-mirin and mirin-style seasoning, and where a substitute genuinely works and where it does not.
Amounts are metric. Nutrition estimates are given for every dish.
